The great thing with this cookbook is that you have most of the ingrediants in the pantry.

Description

Food in a Minute, the much-loved and well known New Zealand TV cooking show brings us their most recent cookbook – Food in a Minute: Everyday Cookbook. With more than 100 recipes, the book is divided into the easy-to-read sections of brunch, lunch and soups; salads and vegetables; mains; slow cooking; and desserts and baking.

Each recipe has an accompanying photograph and many feature recipe-specific ‘tips’. To assist the time-poor cook, recipes have the relevant icons indicating which can be made in less than 30 minutes, those that are healthy choice or suitable for vegetarians, and those that are gluten free.

SAMPLE RECIPE

Seriously Good Potato Salad (pictured left)
There’s no need to wait for the weekend – with summer’s long evenings, a picnic for dinner is a nice way to break the midweek routine.

Prep 10 minutes | Cook 15 minutes | Serves 6

700g baby new potatoes, scrubbed
1 sprig mint
150g sliced salami
½ cup Heinz Seriously Good Mayonnaise
4 tsp wholegrain mustard
4–5 gherkins, sliced
4 radishes, sliced
3 spring onions, sliced handful Italian parsley leaves

  1. Cook potatoes in boiling, lightly salted water with mint, for about 10–15 minutes, or until just tender. Drain. Set aside to cool in a large bowl.
  2. In a non-stick frying pan, pan-fry salami until crisp. Remove from pan and add to potatoes.
  3. In a small bowl, combine mayonnaise with mustard and gherkins.
  4. Add radishes and spring onions to potatoes. Season with freshly ground black pepper. Mix through mayonnaise mixture. Turn on to a serving platter and garnish with Italian parsley.

Tip: The dressing makes a great spread for sandwiches and rolls, and will go with all
your favourite summer fillings.
