Quick filtering can be achieved by turning the knob to press. For a drier, cheese-like texture, add the spring and refrigerate. Filtering time should not exceed 48 hours. Longer filtering produces a drier consistency. Experiment to find your preferred texture.
A small amount of whey leakage during pressing is normal. Once the yogurt thickens, leakage will stabilize.
If most or all of the yogurt drains through immediately after pouring, this indicates the yogurt may have been over-stirred or has not set sufficiently. Such yogurt can still be consumed or used as a starter culture but is not suitable for further filtering.
Usage Instructions:
Place the filter bag inside the strainer, pour yogurt into the bag, secure the filter bag, place the pressing plate on top, insert the spring, close the lid, and turn the knob to apply pressure until the desired consistency is reached.
