It has been customary, for ages, to add to this the ferment of leaven to cause the loaf to rise. Among the Jews, though leavened bread was in ordinary use, for certain religious Observances in which bread was used the bread so used was unleavened. In some cases in which it was used the omission of leaven had some Special historical Significance, ag. At the Passover; in other cases, such as the ordinance of the Shewbread, and the use of bread in sacrifice, unleavened bread was used probably for the sake of convenience, as keeping better.
