British-born pastry chef Darren Purchese has won a loyal, enviable following over five years with his Sweet Studio Burch & Purchese, on Chapel Street in Melbourne.   Together with wife Cath Claringbold, he has built a reputation for stunning feats of sugary deliciousness combining jellies, sponges, mousses, cream, crumbles and spreads. Many creations are works of art as much as they are a birthday cake or celebration dessert. Darren has played a prominent role on MasterChef over successive years (he was responsible for the passionflower pressure test, one of the highest rating episodes in 2015), and had a cameo role in Neighbours in 2015 – playing himself. With Lamingtons & Lemon Tart, his most recent book, he demonstrated to fans that he was not all about high-end theatrics in the kitchen – and that he loves comfort food and treats as much as the next sweet tooth.
