Author Biography:

Stephen Saunders, RD, is a vegan and registered dietician who earned his bachelor of science degree in food and nutrition from Plattsburg State University, New York. He completed his dietician internship at the University of Delaware and received his bachelor of science degree in biology from Long Island University. Saunders has worked as a registered dietician for over a decade, including serving in hospitals as a clinical dietician. He is board certified to act as a nutrition support specialist for critically ill patients. A prolific crusader for veganism and healthy living, Saunders has counseled thousands of people via lectures, seminars, and one-on-one sessions. He has written health articles for newspapers and magazines, appeared on local television as a health authority, and written nutrition newsletters for hospitals. Saunders holds a black belt in judo and both teaches and competes. He enjoys exploring the United States and visiting its glorious national parks.
